
- 1 cup almond meal
- ½ cup almond butter (or any nut butter you have on hand)
- ¼ cup maple syrup
- (Optional) splash of vanilla extract
- (Optional) pinch of baking soda
- Optional add-ins:
- chocolate chips
- chopped walnuts
- dried fruit
- These cookies are soft, nourishing, and endlessly adaptable. Perfect for slow mornings or sharing with a friend over tea. Preheat your oven to 175°C.

In a mixing bowl, stir together the almond meal, almond butter, and maple syrup until smooth and sticky.

If using, add a splash of vanilla and a pinch of baking soda.

Fold in your choice of extras or whatever you’re feeling that day.

Roll the dough into small balls, place on a lined baking tray, and gently press them down with your fingers.

Bake for 8-10 minutes, until just golden around the edges.
